Cook Time: 10 min.
Ingredients
Strawberry Filling
2 cups fresh strawberries
1 ½ teaspoons corn starch
2 teaspoons lemon juice
2 Tablespoons maple syrup
Refrigerated pie crust
1 egg
1 teaspoon milk
raw sugar (turbinado)
Directions
To make your filling:
Slice your cleaned strawberries into small pieces and put in a saucepan.
Add corn starch, maple syrup and lemon juice.
Cook mixture over medium heat for about 8-10 minutes, until it thickens and the strawberries soften. Feel free to add a tablespoon or two of water if it gets too dry.
Chill strawberry filling in fridge until cool.
To assemble heart hand pies:
Preheat oven to 400 degrees. Roll out your dough, either homemade or store bought refrigerated dough on a lightly floured surface.
Using a heart cookie cutter, cut out an even number of hearts.
Drop a tablespoon of the filling in the middle of half of the hearts.
Brush your egg wash on the outer edge of those hearts.
Next, using your fingers or a rolling pin, make the remaining hearts a bit bigger.
Place those hearts on the top of all the hearts with filling.
Using a fork, crimp the edges securely.
Using a knife, cut a few vents into the dough.
Brush the egg wash on the top of the hand pies and sprinkle with raw sugar.
Bake for 10-12 minutes, until golden brown. Makes 1 dozen.
