Acai Berry Breakfast Bowl

For a healthy start to your day, try this uplifting, energy-packed breakfast smoothie.

Ingredients:

1 6-ounce pouch frozen acai fruit
1 cup frozen mixed berries
1 tablespoon chia seeds
1 banana, sliced
1 tablespoon local honey
1/2 cup plain greek yogurt (optional)



Toppings:
1/2 cup fresh berries
1 tablespoon coconut flakes
3 tablespoons granola
1 tablespoon raw walnuts
1 tablespoon raw almonds

Directions:

In a blender, process frozen acai fruit, frozen berries, yogurt, chia seeds, half of the banana, and honey until smooth.
Pour puree into a bowl and top with the rest of the ingredients. Enjoy!

Almond Honey Dutch Baby

The Dutch Baby services as a perfect canvas for all seasonal fruit. This winter, try it with citrus, spring calls for strawberries, summer pairs well with bourbon caramelized nectarines, and apples are perfect for fall.

Ingredients
:
5 large eggs
1 1/4 cup whole milk
2 teaspoons vanilla extract
1/4 cup honey
½ cup almond meal
1 cup white whole wheat flour
2 tablespoons butter

Directions:

Preheat oven to 400°F.
Put the butter in a 12-inch cast iron pan and place in preheated oven.
Place remaining ingredients in a blender* and give it a whirl until mixed.
Once the butter has completely melted, remove the pan from oven and pour the batter over the butter. Return to the oven for 20 minutes or until the Dutch Baby is golden brown and slightly puffy around the edges.
Serve immediately and dust with powdered sugar if desired.

*If you don’t have a blender, you can whisk all the ingredients in a bowl.

Farmer’s Frittata


A frittata is like a blank canvas, ready for whatever veggies, herbs, meats, and cheeses you have on hand. Play with ingredients you find at the farmer’s market or around your kitchen.

Ingredients:

8 farm-fresh eggs
1/4 cup whole milk
1 cup chopped fresh seasonal vegetables
1 tablespoon unsalted butter
1/2 tablespoon olive oil
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup shredded cheese

Directions:

In a mixing bowl, whisk eggs, milk, salt, and pepper.
Add butter and olive oil to a 9- or 10-inch skillet, over medium heat.
Add vegetables and sauté until just done.
Reduce heat to medium and add the egg mixture, gently stirring until it just starts to thicken.
Top with cheese and place in the oven to broil until top begins to brown and fluff up, about 3-4 minutes.
Using a spatula, gently run along the edges of the frittata and slide it onto a plate. Slice into wedges. Serve warm.
